The Cozy Girl Dinner You’ll Love: Easy Boursin Vegetable Pasta Recipe

Hey girlfriend!
I would like to apologize for my little disappearing act. October was an oddly long month, but I enjoyed every drop of it. That said, consider this a fair warning that another short hiatus might happen soon due to the amount of holidays and travel plans that take place around this time of year.
You know how it goes.. Wake up. Work. Then run around town in a desperate attempt to complete as much as possible before your body shuts down with the sun at 6pm. Normally this time of the year takes a toll on my physical and mental, but this year I’m actually thankful for the additional dark hours because I’m inspired to go to bed at an earlier time. And who doesn’t love more sleep even if it’s at the expense of some unchecked tasks on the to-do list?
My body and schedule aren’t the only things that feel the strain during this time of the year. My wallet is always close behind.. Actually neck and neck would be a more accurate description. With the amount of gift giving and traveling that happens around this time, I’m always searching for ways to save as much as possible. Thankfully, word on the street is this year we’re boycotting consumerism Christmas. Thank Heavens!
So. Time, energy, money: these are the three things that I’m looking to conserve at the moment. And thanks to this recipe, I found it to be one hundred percent achievable. Now before I go dishing out (get it?) this recipe, I must give credit to the one who graciously shared it with me: my sorority sister Bria. It was actually her birthday yesterday, so everyone say happy belated and thank you to Bria because she came in so clutch with these recipe. Stereotypical girl dinner is usually a protein and pasta, so if that’s in the realm you reside in, congrats, you are about to add a new staple to your rotation.
This recipe has cost efficient ingredients and time saving prep time. When I made this dish this past week, I set everything up to cook at the same time; I was off my feet in about ten minutes, and my meal followed twenty minutes later. So without further ado, here is the warm and hearty recipe that you’ll surely be thanking Bria for after your first bite.

Ingredients
1 box of pasta (Barilla Protein for a little razzle dazzle)
1–2 cups of chicken (or your protein of choice)
1 small container of cherry tomatoes
2–3 large handfuls of spinach
1 handful of mushrooms (optional)
2–4 cloves of garlic
3 blocks of Boursin cheese
Olive oil
Seasoning of your choice
Instructions
Preheat your oven to 400°
Place the Boursin Cheese in the center of a roasting pan
Slice your vegetables and add into the pan
Drizzle in olive oil and seasoning(s)
Chop or form protein into bite size pieces and place in a separate roasting pan
Roast both for 20 minutes
Meanwhile, bring a pot of water to a boil and add in pasta
When noddles soften rinse with cold water
After 20 minutes, remove protein, and cheese and vegetables from oven
Spread cheese around while slowly adding in protein and pasta
This recipe is so simple, it’s literally impossible to mess up. But the best part is it’s delicious! It’s so good, it taste like a cheat day but the added vegetables and proteins say otherwise.
If you want to stretch the meal further, serve it with garlic bread or an extra side of roasted vegetables. My only tip: Have some mints or gum handy afterward because that garlicky goodness will linger. Don’t say I didn’t warn you!
